Easter in Tuscany is more than just a holiday: it’s an experience of flavors, aromas, and conviviality. Among the richly set tables of our countryside, roast lamb with aromatic herbs is the symbolic dish of these festive days, combining simplicity, taste, and elegance.

Imagine the fragrance of rosemary and sage filling the kitchen as the leg of lamb slowly roasts, absorbing all the aromatic flavors, ready to become the centerpiece of an unforgettable Easter lunch.

Ingredients (serves 4–6)

1 leg of lamb (1.5–2 kg / 3–4 lbs)

4–5 sprigs of fresh rosemary

4–5 sage leaves

4 garlic cloves

50 ml extra virgin olive oil

Salt and pepper, to taste

1 glass dry white wine (optional)

200 ml vegetable broth or water

Step-by-Step Preparation

1. Marinate with tradition
Finely chop the garlic, rosemary, and sage, and mix with olive oil, salt, and pepper. Massage the leg of lamb with this aromatic marinade and let it rest in the refrigerator for at least 2 hours, preferably overnight. This allows the flavors to deeply penetrate the meat.

2. Sear and brown
In a large pan, heat a drizzle of olive oil and sear the lamb on all sides until golden brown. This step seals in the juices, ensuring tender and succulent meat.

3. Slow roasting in the oven
Transfer the lamb to a roasting pan, add the white wine (if desired) and broth. Cover with aluminum foil and roast at 160°C (320°F) for about 2–2.5 hours. Baste the meat with the pan juices every 30–40 minutes. In the last 20 minutes, uncover the pan to allow the surface to brown.

4. Serve and enjoy
Let the lamb rest for 10 minutes before slicing. Serve with spring sides such as roasted potatoes, artichokes, or seasonal vegetables.
